Dehesa Las Cumbres, specialists in the production and sale of Iberian products, presents its new method of sustainable plating of Iberian products, along with a wide range of more than 60 product references.

The company reinforces its commitment to the search for sustainable alternatives that reduce the environmental footprint of the packaging of its highest quality products. This new design, unique on the market, has a 90% reduction in plastic and is suitable for direct table presentations because it maintains the perfect temperature for consumption at all times.

This format offers restaurateurs a fast and efficient service, with an exclusive design, which guarantees the best quality of the product, without affecting its operation or entailing an additional expense for them.

“Designing sustainable plating for Iberian products is not only a matter of aesthetics, but also of finding the right balance between attractive presentation, product preservation and maximum respect for the environment. These three aspects are another example of the high quality of the products we offer,” the company explains.

The excellence of the Iberian

The Iberian product is synonymous with gastronomic excellence and represents one of the fundamental pillars of Spain's culinary identity. With its incomparable flavor and texture, it has conquered palates around the world. This tradition, deeply rooted in the Iberian Peninsula, not only highlights the craftsmanship in its production, but also the economic and cultural importance that it has held in Spain for generations.

Specifically, it moves around 31.000 million euros annually in our country, which corresponds to 28,4% of the entire Spanish food sector. Furthermore, Spain has become the fourth largest producer of pork in the world, with approximately 4,4% of global production; and the European Union, considered as a whole, is the second largest producer in the world, with around 22,7% of the global market.

Antonio Caballero, head of sales at Dehesa Las Cumbres, highlights that “the way of raising livestock in Spain exceeds international production standards, which makes our products exceptional and practically unique.”

Temperature: key to quality

Temperature plays a fundamental role in the preservation and quality of the Iberian product. From production to final consumption, maintaining precise temperature control is essential to ensure the optimal freshness, texture and flavor of these precious foods. This is why, from Dehesa Las Cumbres, they highlight their innovative system that allows a heat sealing in controlled atmosphere, which offers a shelf life of 90 days at cellar temperature, compared to 0o to 5o in the rest of the market.

“The curing process of the Iberian product extends for a period of three to four years, which entails a significant investment that requires rigorous attention at each stage, to guarantee its optimal conservation. Each phase of the process is subject to strict temperature requirements, which are essential to achieve excellence in such a high-quality product,” explains Caballero.
